The Punjabi food forms an important part of the Chandigarh cuisine. This is very famous amongst Indians and foreigners. The staple food is made up of wheat-based rotis, paranthas and naan. Cheese, ghee, cream and butter are extensively used.
The lunches consist of pulses heated on a slow flame accompanied by the traditional Punjabi tadka. The gravy is prepared from a mixture of spices, garlic, ginger, tomato and onion. The food gets a specific aroma due to the earthen ‘tandoors’ used to cook it.
The popular Punjabi vegetarian dishes are Baingan da Bhurtha, Stuffed vegetable Punjabi Parantha, Palak paneer, Punjabi Chhole, Kadhi, Dal Makhni, Sarson ka Saag and Makki di Roti. The famous non-vegetarian dishes are Amritsari fish, Chicken tikkas, Punjabi Lachha paratha and butter chicken.
Punjab-di-lassi is an extremely popular beverage.
